ニューヨーク取材からの帰路、メキシコに2週間ほど滞在して精神を解放した。
スペイン語が片言できると、スペインとメキシコは休まるし、失敗もする。
メキシコではグアナファート銀山の砦跡のホテル泊、朝食はフルーツの山盛り。
懐中が淋しかったのでコーヒーだけで我慢したあとで、テーブル上のものすべて
が朝食料金にふくまれていると知り切歯扼腕。
珍しい土地へ行ったらおめず臆せず訊き、試すことだ。



チョチョス、カラルー、
ポーポー、ネイスベリー、オタヘイト、
プランティンバナナ、バンレイシ、トゲバンレイシ、
タマリンドなどのフルーツはジャマイカでのご馳走です。
ホットドックを食べようと思ったらかなり手間取るかもしれません。


お腹を空かせて来てください。長旅でお疲れの方々にご馳走をご用意しております。夢にも見たことのない
ほどの佳肴のあれこれでリフレッシュしてください。希少なジャマイカ産のカキは海岸線沿いのマングロー
ブ林では「日常食」です(大さじ15杯か20杯のタバスコをかけてお召し上がりください。)
日常を抜け出し、中身ぎっしりの焼き海蟹もご用意しております。ベジタリアンには海辺に生息しているオカ
ガニもあります。旬の季節になると、夜は皆こぞって炬火を持ち蟹を採りに行きます(海陸混合の蟹肉にパン
粉を混ぜ、コショウとシャロットも一緒に甲羅に入れて焼いたなら……もう、たまりません)
また、サン・コチョ・スープというジャマイカの古くからの家庭料理はいかが? このスープの具は、鶏肉、牛
肉、トウモロコシ、豚肉、玉ねぎ、トマト、砂糖、サツマイモ、山芋、バナナ、グリンピースなど盛りだくさ
んです(このスープを飲み干したら家から飛び出し甘蔗刈りに行きたくなることでしょう。)
エスカベーシュド・フィッシュ(エスカベーシュとは遷移的という意味で、大魚も小魚も華麗に調理されること、
を指します。)や、ジャマイカ風・ミート・パティ(ジャマイカではこれがホットドックの代わりです。)、焼き
バナナも美味ですよ。焼きバナナはココナッツ・クリームやラム・アイスクリーム、プランティン・チーズケーキ
や、グァバ・プリンもセットにすれば、なお一層おいしく召し上がれます。
月明かりの下でそれらを口に入れたときはもう、疲れなんぞどこか飛んで行ってしまいます(大きなホテルの多
くは北海岸で夜宴を催すのです。)サンゴ礁に当たって跳ね返る波のさざめき、ジャマイカン・ラブソングの柔ら
かな音色、遠くから聞こえてくるルンバの響き、そして夕砂の向こうで静かに佇むウェイターの瞳に映る火炎スキ
ッピングの紅蓮(思わず溜め息。)

In Jamaica, you can feast on chochos, callaloo, pawpaw, naseberries, otaheites, plantains, sweetsops, soursops and tamarinds. But you may have trouble finding a hot dog.


Send us your hungry. Your jaded. Your tired. And we will make them satisfied. And excited. And refreshed.
We will feed them dishes such as they have never dreamed of eating. Tiny Jamaican oysters that "grow on trees" in mangrove forests along the shore. (Scoop 15 or 20 to the spoonful and dip in peppered vinegar.)
We will feed them Stuffed Baked Crabs. No ordinary sea crabs these. But vegetarian land crabs that live in fields near the beach. In season, they come out at night and are hnnted by torchlight. (Mix crab meat with bread crumbs, pepper and scallions, then bake in the shell.)
We will feed them San Cocho, an old Jamaican field hand's dish. Chicken, beef, corn, pork, onions, tomatoes, sweet peppers, sweet potatoes, yams, plantains and sweet green corn. (When you finish this one, you'll want to run right out and cut cane, mon.)
We will feed them Escovitched Fish. (Escovitch, verb, transitive. To prepare Kingfish or Sprats in such a way as to make the hair stand up on the back of the eater's neck.)
We will feed them Jamaican Meat Patties (that's what we eat, instead of hot dogs).
We will feed them Baked Bananas with with Coconut Cream and Rum Ice Cream and Planters' Cheese Cake and Guava Pudding.
And we'll serve them this unjading food in a lovely moonlit setting. (Most of the big hotels on the North Shore hold night beach banquets.) There'll be the sound of the sea against the coral reef, guitars softly plicking through a Jamaican love song, a rhumba box bassily bumping in the background, and the fire skipping over the reflective faces of the waiters who are padding noiselessly across the cool evening sand. (Sigh.)
