若い頃、おとぎ話を読むように、Andre Siegfried A.シーグフリード『現代---二十世紀文明の方向---』(杉 捷夫訳 1956.6.30 紀伊国屋書店)を読みふけった。今では古書店にも現れない本だとおもうので、各章のタイトルだけでもあげておく。
管理の時代 秘書の時代、広告の時代 家事合理化の時代、遊覧旅行の時代、速度の時代 子午線の時代 原型の時代 技術の時代
フランス政府観光局の広告をスクラップしたのは、５つ目の時代の資料として切り取っていたのだと思う。旅行には食事がついてまわる。そして、食事にはマナーが寄り添う。マナーは文化であろう。
これも、本邦初公開･初訳です。

パリのリッツで食事をすると、幾らかかる？
パリ･リッツの有名なゴールデン･ダイニング･ルームに入っていったとしましょう。給仕人とその頭の歓迎のあいさつを受けながら、席へ案内されました。席に着きました。その向こうには、世界でもっとも賞賛されている料理人たちが、あなたの注文を待ち受けています。
まず、世界的に知られている田舎風ブティ･マルミット（小鍋仕立てのスープ）が運ばれてきます。つづいて、シュッキュラン･ドゥ･ブレス（牛と鶏のスープ）、つぶした小玉じゃがいもに舌つづみ。
桃のブランディかけで仕上げ。お勘定？ ４ドルぽっきり--税込みです。
もちろん、パリとリッツのダイニング･ルームの雰囲気に舞い上がって、大金を浪費したからって、誰も止めはしません。たしかに、舞い上がらせるだけの雰囲気を備えていますからね。
でもね、賢く食べれば、リッツでの支払いは、家庭的なビストロや田舎の鄙びたinnでの食事代よりも少なくすますこともできるってことをお忘れなく。
